Thai turkey patties with mango salsaby tn brown |

| Recipe Ingredients |
| 450g turkey mince; 1 lime, grated zest and juice; 1 tbsp Thai fish sauce; 1 tbsp light soy sauce; 2 tbsp chopped fresh coriander; 1 green chilli, deseeded and finely chopped; 50g fresh white breadcrumbs; 6 spring onions, finely chopped; 1 ripe mango, peeled, stoned and chopped; 1/2 cucumber, chopped; 2 tbsp mango chutney; 1 tbsp sunflower oil. |
| Recipe Method |
| In a large mixing bowl put the turkey mince,
fish sauce, soy sauce, lime zest, the chopped coriander, chilli,
breadcrumbs and half of the spring onions. Mix through. Leave to
marinate. Meanwhile make the mango salsa. In a serving bowl add the remaining spring onions, cucumber, lime juice, mango and mango chutney. Mix together and set aside. Using wet hands shape the mince mixture into 16 thin patties. Heat the oil in a nonstick frying pan (will have to cook the patties in batches). Cook the patties for 4 mins on each side or until cooked through. Serve the patties with the mango salsa. |
