| Recipe Ingredients |
| 5 British Victoria plums, halved, stoned and
chopped; 100g ground almonds; 25g flaked almonds; 3 large eggs; 175g golden caster sugar; 175g self-raising flour; 1.5 tsp baking powder; 175g butter, softened, plus extra for greasing; 1 tbsp milk; 2 tbsp demerara sugar. |
| Recipe Method |
| In a bowl sift the flour and baking powder and
add the butter, milk, caster sugar and eggs. Beat using electric
whisks until smooth. In a bowl mix together the ground almonds and plums until the plums are coated. Add to the cake mixture and stir through. Spoon mixture into a 20cm round cake tin which has been greased and lined. Level the top. Scatter the flaked almonds and demerara sugar over the top. Bake for 1 hour in a preheated oven (180c/gas4) until cooked through. Remove cake from tin and allow to cool on a wire rack before serving. |
