Banana bread

Serves: 6

Recipe Ingredients
60g butter
120g caster sugar
1 egg
2 large ripe bananas - mashed to a pulp
240g wholemeal self-raising flour
pinch of salt
3 tablespoons natural yogurt
 
Recipe Method
Cream together the butter and sugar until light and fluffy. Beat in the egg, and then the banana.

Add the salt to the flour. Then beat in a third of the flour, then a third of the yogurt. Repeat with the remaining flour and yogurt.

Spoon into a lined 2lb loaf tin and bake in a preheated oven gas 4/180c for 1 hour.
