Sweetcorn and bacon chowderby Sam Scott |

| Recipe Ingredients |
| 2 tbsp olive oil; 1 onion, finely chopped; 2 rashers smoked back bacon, chopped; 2 garlic cloves, peeled and finely chopped; 375g potatoes, peeled and diced into small cubes; 800ml chicken stock; 198g can sweetcorn with red peppers; 2 tbsp double cream. |
| Recipe Method |
| Heat the oil in a saucepan and gently cook the
onion and bacon for 5 minutes. Add the garlic and potatoes and cook
for a further 3 minutes. Add the stock, bring to the boil and season. Cover and gently simmer for 30 minutes. Add the sweetcorn, and add the cream to taste. Heat through gently for a few minutes. |
