| Recipe Ingredients |
| 2 red peppers, deseeded and chopped into
bite-sized chunks; 2 red onions, peeled and cut into thin wedges; 3 cloves garlic, peeled and roughly chopped; 1 tsp golden caster sugar; 2 tbsp olive oil; 250g cherry tomatoes, cut into quarters; 220g pasta tubes. |
| Recipe Method |
| Preheat the oven to 220c/gas 6. Put the peppers, onion and garlic into a large roasting pan. Sprinkle over the sugar and olive oil. Season with salt and pepper then toss the vegetables to coat in the oil. Roast for 15 minutes, stirring occassionally. Add the cherry tomatoes and continue to roast for a further 15 minutes. Meanwhile cook the pasta in boiling water according to the pack instructions. Drain. Add the pasta to the roasting tin and mix through. Serve immediately. |
