Lemon pudding

Serves: 4

Recipe Ingredients
50g butter;
75g caster sugar;
juice and grated rind of 1 lemon;
2 eggs, separated;
50g self-raising flour;
250ml milk.
 
Recipe Method
Put the butter, sugar, lemon rind and juice in a bowl and cream together with an electric whisk. Beat in the egg yolks.

Sift in the flour and add the milk, mix well.

In a separate bowl whisk the egg white until stiff and fold into lemon mixture. Pour into a greased 2-pint pie dish and bake at 180c/gas4 for 35-40 minutes.

Turn out to serve - the top should be sponge with a lemon sauce underneath.
