Asparagus and bean salad

Serves: 4

Recipe Ingredients
225g fine green beans;
225g frozen broad beans;
200g asparagus tips;
3 tbsp olive oil;
1 tsbp balsamic vinegar;
1/2tsp dijon mustard;
3 spring onions, finely sliced;
6 pitted black olives, chopped.
 
Recipe Method
Bring a pan of water to the boil and boil the beans for 5 minutes adding the asparagus tips after 2 minutes.

Drain, rinse under cold water and drain again.

In a small bowl whisk together the oil, vinegar and mustard and season.

Put the vegetables into a serving bowl along with the spring onions and olives. Add the dressing and toss everything together.
