Devilled mackerel

Serves: 4

Recipe Ingredients
4 mackerel, cleaned, tails and heads removed;
25g soft butter;
1/2tsp cayenne;
1 1/2tsp paprika;
2tsp English mustard;
1tsbp balsamic vinegar;
1 1/2tsp brown sugar;
new potatoes and vegetables to serve.
 
Recipe Method
Cut 3 slashes on one side of each of the mackerel fillets. Place in an ovenproof dish, cut side up.

In a small bowl, mix the butter, cayenne, paprika, mustard, balsamic vinegar and sugar. Spread a little in the cuts on the fish and the rest inside the fish.

Bake for 20 minutes at 200c/fan 180c/gas6. Serve with some new potatoes and vegetables.
