| 675g plums, halved and stoned; 150g butter; 150g caster sugar; 4 eggs; 1/2tsp vanilla extract; 150g plain flour; 1 tsp baking powder; for topping: 115g plain flour; 1 tsp baking powder; 130g soft brown sugar; 1/2 tsp ground cinnamon; 75g butter, diced. |
| Recipe Method |
| First make the topping by mixing together the
flour, baking powder, sugar and cinnamon in a bowl. Rub in the
butter with your fingertips until the mixture resembles coarse
breadcrumbs. Next for the cake, cream together the butter and sugar until light and fluffy. Beat the eggs in one at a time. Fold in the vanilla. Sift together the flour and baking powder, then fold into the butter mix a third at a time. Spoon the mixture into a greased and lined 25cm loose-bottomed cake tin. Arrange the plums on top then sprinkle over the topping. Bake for 45 minutes at 180c/gas4, until an inserted skewer comes out clean. Allow to cool in the tin, then carefully remove. |
