| 150g plain flour; 1/2tsp baking powder; a pinch of salt; 175g white chocolate, chopped; 90g caster sugar; 115g unsalted butter, cut into cubes; 2 eggs, lightly beaten; 1 tsp vanilla extract; 175g plain chocolate chips; for the topping: 200g milk chocolate, chopped; 215g macadamia nuts, chopped (or use toasted and skinned hazelnuts). makes about 12 wedges. |

| Into a large bowl sift the flour, baking powder
and salt. Gently melt together the white chocolate, sugar and butter in a saucepan over a low heat, stirring until smooth. Allow to cool slightly before beating in the eggs and vanilla. Stir in the chocolate chips. Spoon the mixture into a greased 23cm springform tin and level the top. Bake for 20-25 minutes at 180c/gas4 until an inserted knife comes out clean. Sprinkle over the chopped milk chocolate and return to the oven for a further minute. Using the back of a spoon, carefully spread out the melted chocolate, sprinkle with the nuts and gently press into the chocolate. Place the tin on a wire rack to cool for 30 minutes then chill for 1 hour. Cut the brownies into thin wedges to serve. |
