Tropical chicken saladby Janet Swann

|150g cooked chicken breast, cubed;
250g cooked long grain and wild rice;
3 tbsp juice of a lime, plus grated zest of 1/2 of the lime;
1 mango, peeled, stoned and cubed;
2 red chillies, finely chopped;
1/4 fresh pineapple, skinned and cubed;
2 celery sticks, sliced;
1 red pepper, diced;
2 tsp clear honey;
3 tbsps sunflower oil;
salt and pepper.
|Into a bowl put the chillies, lime zest and
juice, honey and sunflower oil, and season with salt and pepper.
Add the cold, cooked rice and mix through. Add the red pepper and celery and mix well. Add the mango, pineapple and chicken and lightly toss through.
