|150g plain flour, sifted;
2 1/2 tsp baking powder;
2 tbsp caster sugar;
200g toasted oat cereal with raisins;
50g butter, melted;
1 egg, beaten.
|Line a muffin tin with 10 paper muffin cases,
and preheat the oven to 200c/gas6.
Put the flour, baking powder and sugar in a large bowl and mix together. Mix in the cereal.
In a separate bowl, combine the milk, melted butter and egg. Add to the dry ingredients. Gently stir through.
Spoon the mixture into the cases, leaving room for the muffins to rise. Bake for 20 minutes. Transfer to a wire rack to cool.
