Pasta with a mushroom, red wine and herb sauce

Serves: 4

Recipe Ingredients
1 tbsp olive oil;
1 onion, finely chopped;
1 garlic clove, crushed;
500g mushrooms, thinly sliced;
50ml red wine;
300ml passata;
125ml water;
1 tsp dried oregano;
1 tsp dried thyme;
pasta for 4 people.
 
Recipe Method
Heat the oil in a large pan and gently cook the onion and garlic until soft. Add the mushrooms and cook for a further 5 minutes.

Add the wine and allow to bubble for a couple of minutes to reduce slightly. Add the passata and water, and then the herbs. Season to taste.

Bring to the boil and simmer, semi-covered for 20-25 minutes.

Meanwhile cook the pasta according to the pack instructions. Drain.

Serve the sauce with the pasta.
