Pistachio cake

Serves: 10

Recipe Ingredients
250g soft brown sugar;
4 eggs;
250ml olive oil;
375g plain flour;
3 tsp baking powder;
250g raisins;
250g unsalted pistachio nuts (shelled weight);
3 tbsp milk, optional.
 
Recipe Method
Put the sugar and eggs into a large bowl and whisk together. Whisk in the oil, then the flour and baking powder.

Fold in the raisins and pistachio nuts, reserving a few for decoration. If the mixture is too dry add a little milk.

Line a 20cm square cake tin and spoon in the mixture. Bake for 1 hour to 1 hour and 15 minutes at 180c or gas 4.

Allow to cool in the tin for 10 minutes, then turn out onto a wire rack and decorate with the remaining pistachios. Cover the cake with a tea towel until cold.
