| Recipe Ingredients |
| 3 tbsp sunflower oil; 500g skinless, boneless chicken breasts, cut into thin strips; 1 small bunch basil, chopped; 4 spring onions, sliced; 2 small red chillies, deseeded and chopped; 2 tbsp fish sauce; 1 tsp sugar; 1/2 tsp ground coriander. |
| Recipe Method |
| Heat the oil in a large frying pan. Fry the
chicken until browed all over, about 3 minutes, remove from pan and
set aside. Stir-fry half the basil, spring onions and chillies for 1 minute, then add the fish sauce, sugar and coriander and the browned chicken. Stir-fry for another 2 minutes or until the chicken is cooked through. Serve with the remaining basil scattered on top. |
