Yogurt and mango chutney marinated chicken

Serves: 6

Recipe Ingredients
1.8kg chicken;
olive oil, for greasing;
500g natural yogurt;
120g mango chutney;
1 tsp ground turmeric;
1/2 tsp allspice.
 
Recipe Method
First make the marinade by combining the yogurt, mango chutney, turmeric and allspice in a bowl.

Quickly rinse the chicken in cold running water and pat dry, on the inside too, with some kitchen paper. Spoon some of the marinade inside the cavity and then completely coat the outside of the chicken with the marinade.

Cover and chill for at least 1 hour, preferably overnight.

Grease a roasting pan with some olive oil, place the chicken in the pan and roast for 1 hour 30 minutes at 180c, until cooked and the juices run clear. Cover with foil and leave to rest for 15 minutes before serving.
