Glazed gammon

Serves: 8

Recipe Ingredients
1.75kg smoked gammon joint;
2tsp whole cloves;
2 tbsp redcurrant jelly;
grated zest and juice of 1/2 orange;
1/2tsp Dijon mustard.
 
Recipe Method
Place the joint in a large pan and cover with cold water. Cover with a lid and bring to the boil, simmer for 1 hour 30 minutes. Drain.

If the gammon has a rind, remove with a sharp knife and score the fat in a criss-cross pattern. Stud the cloves into the crosses.

Place the joint on a roasting tin. Gently heat together the redcurrant jelly, zest and juice and mustard in a small pan. Stir until blended. Brush over the joint. Roast in a preheated oven (200c/gas6) for 20 minutes.
