| For the apple and raisin layer: 1kg bramley cooking apples, peeled, cored and sliced; 50g raisins; 3 tbsp caster sugar; For cinnamon cobbler: 50g butter; 115g plain flour; 1/2 tsp ground cinnamon; 1 tsp baking powder; 50g caster sugar; 150g low fat natural yogurt; For chantilly cream: 142ml double cream; 1 tbsp caster sugar; 1/2 tsp vanilla essence. |

| Preheat the oven to 220c/gas mark 7. Put the apples in a pan along with the raisins, sugar and 3 tbsp water. Cover and gently cook for 10 minutes until soft and pulpy. Meanwhile, put the flour, cinnamon, baking powder and sugar in a bowl and rub in the butter. Mix in the yogurt to form a soft dough. Add more sugar to the apples if they are not sweet enough and tip into an ovenproof dish. Drop 8 spoonfulls of dough around the edge of the dish, sprinkle with some sugar and bake for 20 minutes until the dough is firm to the touch. Make the chantilly cream by whipping the double cream with the sugar and vanilla essence, and serve with the cobbler. |
