Walnut and date cake

Serves: 10

Recipe Ingredients
225g chopped dates;
250ml boiling water;
1tsp bicarbonate of soda;
225g caster sugar;
1 egg, beaten;
275g plain flour;
1/2tsp salt;
75g butter, softened;
1tsp vanilla extract;
1 tsp baking powder;
50g chopped walnuts.
 
Recipe Method
Put the chopped dates in a bowl and cover with the boiling water. Add the bicarbonate of soda and leave to soak for 10 minutes.

In a large bowl, mix together all the remaining ingredients. Then add the dates along with any remaining soaking water. Mix until forms a thick batter.

Spoon into a greased and lined 23cm square cake tin. Bake at 180c/ gas 4 for 45 minutes. Cut into thick wedges when cool.
