Bramble pudding

Recipe Ingredients
For the filling:
450g blackberries;
75g caster sugar;
squeeze of lemon juice;
1tsp cornflour;

For the topping:
50g butter;
50g caster sugar;
1 large egg, beaten;
115g plain flour, sifted;
1 tsp baking powder;
2 tbsp milk;
grated rind of 2 lemons.
 
Recipe Method
Put the blackberries in a pan with enough water just to cover. Add the lemon juice and sugar. Cook for about 5 minutes until soft. Mix through the cornflour and spread in the base of an ovenproof dish.

Cream the butter and sugar and then add the egg. Mix the flour with the baking powder then add it alternately with the milk to the butter mixture, mixing well after each addition. Stir in the lemon rind.

Spoon the mixture evenly over the blackberries. Cook for 20-30 minutes at 180c/gas4 until the top is golden brown. Serve with lots of cream!
