| Recipe Ingredients |
| 2kg potatoes such as maris piper ot desiree,
peeled and cut evenly into halves or quarters; 4tbsp goose fat or 200ml olive oil; sea salt. |
| Recipe Method |
| Parboil the potatoes for 10 minutes. Drain well
and return to the pan and set over a low heat for a few seconds to
allow remaining moisture to evaporate. Give the pan a good shake to roughen up the edges of the potatoes, which will make them crispier. Put the fat or oil in a large roasting pan and heat in the oven at 190c/gas5/375F for 5 minutes until hot. Carefully add the potatoes, turning them to coat in the fat or oil. Roast for 1 hour (can do this above the turkey) tossing them afer 30 minutes to ensure even cooking. Sprinkle with sea salt to serve. |
