Chunky mushroom and chestnut loaf

Serves: 4

Recipe Ingredients
1 onion, chopped;
2 celery sticks, finely chopped;
25g butter;
250g mushrooms, chopped;
250g chestnut mushrooms; chopped;
240g can vacuum-packed chestnuts, chopped;
2 tbsp parsley, chopped;
juice of 1/2 a lemon;
125g dried cranberries;
2 large eggs, beaten;
pinch of ground nutmeg.

 
Recipe Method
Melt the butter in a pan and cook the onion and celery for 5 minutes. Add the mushrooms and cook for a further 10 minutes. Transfer to a large bowl.

Mix in the remaining ingredients and spoon into a greased and lined loaf tin. Bake for 50-60 minutes at 180c/gas4 until golden brown and firm in the centre.
