Potato cakes

Serves: 4

Recipe Ingredients
675g potatoes, peeled and cut into cubes;
25g unsalted butter;
175g plain flour;
salt.
 
Recipe Method
Cook the potatoes in boiling water for about 15 minutes until tender. Drain and return to the pan. Mash and season with salt. Mix in the butter and allow to cool.

Lightly flour a work surface and turn out the mash. Knead in the flour until it forms a pliable dough.

Roll out to a thickness of about 1cm and cut into triangles (about 12).

Heat a griddle or heavy frying pan and cook the potato cakes for about 3 minutes on each side until browned. Serve hot.
