Provencal fish

Serves: 4

Recipe Ingredients
4 frozen white fish fillets;
400g can chopped tomatoes;
225g closed cup muashrooms, quarted;
1 green pepper, thinly sliced;
1 tbsp oil;
freshly chopped parsley to garnish.
 
Recipe Method
Put the fish on a baking sheet. Mix the tomatoes, mushrooms and pepper together and spoon over the fish. Season and drizzle with oil.

Bake for 20 minutes at 200c/gas 6. Serve with parsley sprinkled over the top.
