Highland winter vegetables

Recipe Ingredients
675g Maris piper potatoes, peeled and cubed;
225g carrots, peeled and chopped;
1 small turnip, peeled and cubed;
salt and freshly ground black pepper;
1 small savoy cabbage, finely shredded;
50g butter;
1 tbsp freshly snipped chives;
50g mature cheddar, grated.
 
Recipe Method
Cook the potatoes, carrots and turnips in a large pan of boiling salted water for about 20 minutes until tender. Drain.

Meanwhile cook the cabbage in another pan with a small amount of lightly salted boiling water for 5 minutes. Drain.

Mash together the vegetables, with the butter, chives and seasoning. Transfer to an ovenproof dish, sprinkle over the cheese and bake for about 20 minutes at 200c/gas6.
