| 4 chicken skinless breasts; 1 tbsp olive oil; 300ml chicken stick; 4 tbsp fine-cut marmalade; 1 tsp fresh thyme; boiled rice to serve. |
| Recipe Method |
| Season the chicken with salt and pepper. Heat the oil and fry the chicken for about 15 minutes, turning occasionally until cooked through. Add the stock, marmalade and thyme. Simmer for 10 to 15 minutes until the sauce becomes syrupy. Serve the chicken with the sauce spooned over along with some boiled rice. |
