| Recipe Ingredients |
| 1 tbsp mild curry paste or powder; 500g carrots, chopped; 1 cooking apple, chopped; 1 onion, chopped; 750ml vegetable stock; 2 tsp sunflower oil; salt and pepper; natural yogurt to garnish. |
| Recipe Method |
| In a pot gently heat the oil. Fry the curry
powder for about 3 mins. Add the onion, apple and carrots. Stir and leave to cook on a low heat with a lid on for about 15 mins until softened. Transfer into a blender along with half of the stock and process until smooth. Return mixture to the pot along with the remaining stock. Bring to the boil, stirring occasionally. Season with salt and pepper to taste. Serve with the natural yogurt swirled on the top. |
