Christmas pudding ice cream

Serves: 6

Recipe Ingredients
225g dried mixed luxury fruit;
2 tbsp brandy;
50g caster sugar;
2 tbsp liquid glucose;
1 tsp mixed spice;
1 tsp cinnamon;
500ml ready made fresh custard;
300ml double cream.
 
Recipe Method
Put the dried fruit in a bowl with the brandy and leave to soak.

Place a freezable container in the freezer.

In a pan, gently heat 75ml water with the sugar and liquid glucose until the sugar dissolves. Increase the heat and bring to the boil. Add the spices and remove from the heat. Stir to blend together then allow to cool.

Meanwhile in a large bowl mix together the custard and the cream. Add the sugar syrup, fruit and brandy. Stir until combined.

Remove container from freezer, pour in the ice cream mixture, return to the freezer and leave for 6 hours. Take out the freezer and whisk with a fork to ensure fruit is evenly distributed and refreeze for a further 6 hours. Remove from the freezer 15 minutes before serving.
