Pork chops with sageby Janet Swann |

| Recipe Ingredients |
| 4 pork chops, trimmed of excess fat; 1 tbsp chopped fresh sage (or 1 tsp dried sage); 2 tbsp flour; 15g butter; 1 tbsp lemon juice; 2 tsp caster sugar; 2 red onions, sliced into rings; 4 plum tomatoes, quartered; 2 tbsp olive oil; salt and pepper. |
| Recipe Method |
| On a plate, mix the flour and sage and season
with the salt and pepper. Lightly dust the pork chops on both sides
with this seasoned flour. Put the onion in a bowl and add the lemon juice. In a frying pan heat the oil and butter. Add the chops and cook them for 7 mins on each side, or until cooked through. Remove the chops from the pan juices (leave in the pan) and keep warm. Into the same frying pan add the onion, sugar and tomatoes and fry for 5 minutes, or until tender. Serve the chops with the tomato and onion mixture. |
