Smoked mackerel pate

Serves: 4

Recipe Ingredients
225g smoked mackerel fillets, skin peeled off;
100g soft cream cheese;
1/2 lemon, juice and grated zest;
8 slices of thick-sliced wholemeal bread;
4 tomatoes, cut into wedges;
bag of baby leaf salad.
 
Recipe Method
Flake the fish fillets into a processor and add the cream cheese, lemon juice and zest. Pulse until combined (keep mixture quite rough rather than smooth). Spoon the pate onto serving plates.

Toast the bread until golden, cut into triangles and serve with the pate, tomatoes and salad leaves.
