| 75g butter; 250g light soft brown sugar; 75g plain chocolate, broken into pieces; 200ml milk; 2 eggs; 175g plain flour; 3/4 tsp bicarbonate of soda; 3 Mars bars, sliced; 175ml double cream, whipped; 1 tbsp icing sugar; |
| Recipe Method |
| Grease and line two 18cm cake tins. Melt the
butter, sugar and plain chocolate together in a heatproof bowl set
over a pan of boiling water. Allow to cool slightly. Once cooled slightly, beat in the milk, eggs, flour and bicarbonate of soda. Divide the mixture between the tins and bake for 25 minutes at 190c/gas 5. Carefully remove sponges from tins. Place one sponge on a plate and arrange the Mars bar slices over the top whilst hot so that they melt. Allow to cool completely. Spread whipped cream over this sponge then sandwich with the other sponge. Dust with icing sugar to serve. |
