| Recipe Ingredients |
| 200g long grain rice; onion, finely chopped; 50g butter; 1tsp curry powder; 75g cheddar, grated; 250g tin chopped tomatoes; 25g sweetcorn; 25g peas; 2 eggs, beaten. |
| Recipe Method |
| Cook the rice in boiling salted water for 12
minutes and then drain well. Heat the butter in a pan and fry the
onion and curry powder for about 5 minutes. In a bowl, mix the cheese, tomatoes, sweetcorn, peas, rice and the cooked onion. Season and bind together with the beaten eggs. Transfer to a greased 2lb loaf tin and bake in a moderate oven (160c) for 1 1/2 - 2 hours. Serve hot or cold. |
