Chicken and mango salad

Recipe Ingredients
4 cooked, skinless chicken breasts;
1 ripe mango;
1/4 cucumber, cut into small cubes;
6 tbsp mayonnaise;
4 tbsp mango chutney;
1 red chilli, deseeded and finely chopped;
1 red pepper, deseeded and sliced;
3 spring onions, trimmed and chopped;
little gem lettuce to serve.
 
Recipe Method
Cut the chicken into bite-sized pieces. Peel, stone and cube the mango.

Mix the mayonnaise, chutney and chilli in a large bowl. Add the chicken, mango, cucumber, red pepper and spring onions. Mix through dressing. Serve on top of the little gem lettuce leaves.
