Moroccan-style haddock

Serves: 2

Recipe Ingredients
1 tbsp olive oil;
1 small onion, sliced;
1 tsp ground cumin;
1/2tsp ground cinnamon;
400g chopped tomatoes;
100g dried apricots;
1 tbsp honey;
zest and juice of 1/2 a lemon;
2 x 175g fresh haddock fillets;
2 tbsp fresh coriander leaves.
 
Recipe Method
Heat the oil in a wide shallow pan and gently cook the onion for 5 minutes. Add the spices, tomatoes, apricots, honey, lemon zest and juice. Season and simmer, uncovered for 10 minutes.

Nestle the haddock fillets in the sauce, cover and gently cook for about 7 minutes until the flesh flakes easily. Scatter with coriander. Serve with couscous.
