Monkfish wrapped in bacon with rocket sauceby Derek Lowery

Cooking time: 15 mins
|8 rashers dry cured streaky bacon;
700g piece monkfish tail, filleted and cut into 4 pieces;
grated rind of 1/2 lemon;
200ml creme fraiche.
|Season the fish and sprinkle over the lemon
zest. Wrap 2 rashers of bacon round each piece of fish and place on
a non-stick baking tray. Roast in the oven for 10-15 mins at
200c/gas6 until the bacon is crisp and the fish is cooked
Put half of the rocket into a blender along with 2 tbsp of the creme fraiche, whizz until finely chopped, add the remaining creme fraiche and season. Whizz until blended.
Pour the rocket sauce over the fish and serve immediately with the remaining rocket.
