Crunchy apricot and almond crumble

Recipe Ingredients
2 x 400g cans apricot halves in light syrup;
25g light brown sugar;
100g plain flour;
50g butter;
75g digestive biscuits, roughly crushed;
25g flaked almonds.
 
Recipe Method
Preheat the oven to 200c/gas6. Put the apricots in a pan with 3 tbsp of their syrup and the brown sugar. Gently heat until the sugar dissolves and the syrup thickens. Tip into an ovenproof dish.

Sift the flour into a bowl and rub in the butter with your fingertips until the mixture resembles breadcrumbs. Mix in the crushed biscuits and flaked almonds. Sprinkle over the apricots. Bake for 20 minutes until golden.
