Mediterranean pasta

Serves: 4

Recipe Ingredients
Pasta for 4 people;
400g can of thick cut chopped tomatoes;
4 shallots, chopped;
4 tbsp sundried tomato puree;
200g soft cheese;
1 clove of garlic;
100g pitted black olives, halved;
1 tsp oil;
fresh basil leaves to garnish.
 
Recipe Method
Heat the oil in a frying pan and gently soften the shallots for 5 mins. Add the garlic and tomato puree and stir. Cook for 2 more minutes.

Stir in the olives and chopped tomatoes. Bring to the boil. Reduce the heat and stir in the soft cheese until it melts.

Tear up the basil leaves and scatter in. Serve with cooked pasta.
