| Recipe Ingredients |
| 250g blackberries 1 tbsp caster sugar 150g fresh custard 1 vanilla pod 142ml double cream |
| Recipe Method |
| Set aside a few blackberries for garnish. Put
the remaining blackberries into a food processor along with the
caster sugar and blend to a puree. Pass this through a sieve. Put the custard into a bowl and stir in the blackberry puree. Using a sharp knife split the vanilla pod lengthways and scrape out the seeds. Stir the seeds into the custard and blackberry mixture. Whip the cream until it forms soft peaks. Gently fold into the custard mixture. Spoon the mixture into 4 serving glasses and chill. Serve with the reserved blackberries on top. |
