Mushroom and blue cheese spaghetti

Serves: 4

Recipe Ingredients
400g spaghetti;
6 rashers streaky bacon, cut into strips;
250g chestnut or button mushrooms, sliced;
200g baby spinach;
100g creamy blue cheese, crumbled.
 
Recipe Method
Cook the spaghetti according to pack instructions in a large pan of boiling water.

Meanwile, dry-fry the bacon in a non-stick frying pan, until crisp. Add the mushrooms and fry for 3-5 minutes until cooked.

Drain the pasta and add to the frying pan along with the spinach and cheese. Toss together over a low heat until the spinach has wilted and the cheese has melted.
