Lime and chilli prawns

Serves: 6

Recipe Ingredients
2 red chillies, deseeded and finely chopped;
1 tbsp cider vinegar;
4 tbsp lime juice;
150ml groundnut oil;
2 tbsp clear honey;
400g frozen king prawns, thawed;
2 ripe avocados, peeled, stoned and cut into chunks;
shredded lime zest to serve.
 
Recipe Method
Put half the chilli in a blender along with the vinegar, lime juice, oil and honey and whizz until smooth. Pour over the prawns, cover and chill for at least 30 minutes. Add the avocado and mix well. Serve immediately with the lime zest and remaining chilli as a garnish.
