| Recipe Ingredients |
| 1 tbsp sunflower oil; 1 onion, peeled and finely chopped; 455g braising steak, diced; 80g sliced chorizo sausage, roughly chopped; 400g thick cut tomatoes; 750ml beef stock; 1 tsp dried oregano; 1 tsp paprika; 1 red pepper, deseeded and diced; 410g can butter beans, drained and rinsed; 150g can sweetcorn, drained; 3 tbsp fresh parsley, chopped; crusty bread to serve. |
| Recipe Method |
| Heat the oil in a large saucepan and gently cook
the onion for 5 minutes until soft. Add the beef and brown all
over. Add the chorizo and cook for a couple of minutes. Add the tomatoes, stock, oregano and paprika. Bring to the boil, reduce heat, cover and simmer gently for 1 1/2 hours. Add the red pepper and cook for 10 minutes, then finally add the beans and sweetcorn and heat through for 5 minutes. Season to taste. Serve with parsley sprinkled on top and a chunk of crusty bread. |
