Italian-style cod

Serves: 4

Recipe Ingredients
1 tbsp olive oil;
4 cod fillets or cod portions;
4 tsp pesto;
50g parmesan, freshly grated;
60g finely sliced parma ham.
 
Recipe Method
Put the cod in a single layer in an ovenproof dish which has been greased with a little olive oil.

Spread a little pesto evenly over the top of each cod portion. Sprinkle over some parmesan and drape a slice of parma ham over each fish fillet. Drizzle with the remaining olive oil.

Bake in a hot oven (180c/gas4) for about 15-20 minutes.
