Spinach and watercress salad

Serves: 4

Recipe Ingredients
1 tbsp lemon juice;
2 tbsp extra virgin olive oil;
1 large bunch watercress, stalks trimmed;
100g baby spinach leaves, washed;
1 small red onion, finely sliced.
 
Recipe Method
Put the lemon juice and olive oil in a bowl and whisk together. Season.

In a serving bowl mix the leaves and onion, drizzle over the dressing and gently mix through.
