Cucumber dip

Serves: 6

Recipe Ingredients
1 medium cucumber;
500g full fat Greek style yogurt;
4 cloves garlic, peeled and crushed;
2 tbsp olive oil;
1 tbsp white wine vinegar;
1 tbsp chopped dill;
olives to garnish;
pitta bread to serve.
 
Recipe Method
Grate the cucumber and squeeze out the excess liquid. Put in a mixing bowl along with the yogurt, garlic, olive oil and wine vinegar. Mix gently.

Season and spoon into serving bowls. Scatter the dill over the dip and garnish with olives. Serve with lightly toasted pitta bread cut into fingers.
