Avocado and seafood salad

Serves: 4

Recipe Ingredients
1 ripe avocado, flesh cut into cubes;
juice of 1/2 lemon;
100g cooked and peeled prawns;
400g canned tuna chunks in brine, drained;
3 tbsps natural yogurt;
3 tbsps mayonnaise;
180g bag of crispy leaf salad
3 spring onions, chopped;
1/2 cucumber, sliced into rings and then halved;
watercress
 
Recipe Method
Put the avocado cubes in a bowl and add the lemon juice. Mix until avocado is coated to prevent it from browning.

In a separate bowl mix together the mayonnaise and yogurt. Stir in the prawns and tuna.

In a serving dish place the lettuce leaves, cucumber, spring onions and a few sprigs of watercress.

Drain the avocado and add to the salad mixture. Top with the fish mixture.
