Casseroled chicken in BBQ sauce

Serves: 4

Recipe Ingredients
8 chicken portions (eg 4 thighs and 4 drumsticks);
1 tbsp plain flour;
25g butter;
2 tbsps oil;
salt and pepper;

1 small onion, chopped;
275g cream of tomato soup;
2 tsps mustard;
1 tbsp red wine vinegar;
1 tbsp Worcestershire sauce;
2 tbsps soft brown sugar;

to serve: serve with rice
 
Recipe Method
Season the flour and with it lightly coat the chicken pieces.

In a large frying pan, heat the oil and butter. Fry the chicken portions until golden all over.
Transfer to a casserole dish.

In the same fat fry the onion for about 1 minute. Add all the other ingredients and simmer for 10 mins.

Pour this mixture over the chicken. Cover the casserole with a lid and cook in a preheated oven (180c, gas4, 350F) for 1 hour.

Serve with rice.
