| Recipe Ingredients |
| 4 salmon fillets with skin on; 50g dark soft brown sugar; 40g sea salt; black pepper; 100ml vodka good served with toasted bagels and sour cream |
| Recipe Method |
| Mix the sugar, salt and pepper in a bowl and
spread over the salmon. Put the fish in a bowl and add the vodka.
Leave to marinate for about 4 hours, turning occasionally. Remove the salmon from the marinade and cook under a hot grill (or on the barbeque) for about 12 minutes until tender. |
