| 1 onion -half finely chopped, the other half
sliced; 500g pork mince; 1 egg, lightly beaten; salt and pepper; 1 tbsp olive oil; 100g button mushrooms, sliced; 1 tbsp paprika; 400g can tomatoes; cooked tagliatelle to serve 4 |
| Recipe Method |
| Put the mince, egg and the finely chopped onion
in a bowl and combine. Season well with salt and pepper. Shape the
mixture into about 16 small balls. Heat the oil in a large deep frying pan (non-stick is best) and cook the meatballs until golden. Add the remaining onion slices and continue cooking until onion has softened. Add the mushrooms and cook for a few minutes. Add the paprika, tomatoes and half a can of water. Gently stir then bring to a boil. Turn down the heat and simmer for 10 minutes, until the meat is cooked through and the sauce has thickened slightly. Serve with the cooked tagliatelle. |
