| Recipe Ingredients |
| 1 large onion, chopped; 20g butter; 1tbsp plain flour; 1/2 tsp caster sugar; 500g frozen peas; 2 pints chicken stock; handful of fresh mint sprigs, plus extra for garnish |
| Recipe Method |
| Melt the butter in a large pot and gently cook
the onion for about 8 minutes until soft. Add the flour and cook
for a further 2 minutes. Add the peas, sugar, mint and stock. Bring to the boil, season then simmer gently for 5 minutes. Transfer to a blender and blitz until smooth. Return to the pan and heat through. Serve with the remaining mint sprigs as a garnish. |
