Light minestrone soup with gnocchi

Serves: 4

Recipe Ingredients
4 tbsp olive oil;
1 onion, chopped;
1 clove garlic, peeled and crushed;
1 carrot, peeled and sliced;
1 stick celery, sliced;
2 tsp freshly chopped thyme;
125ml white wine;
400g canned borlotti beans, drained;
400g ready made gnocchi;
75g savoy cabbage, roughly chopped;
1 red pepper, chopped;
75g frozen peas;
1 litre vegetable stock;
parmesan shavings to garnish
 
Recipe Method
Heat the oil and gently cook the onion, carrot, celery and thyme for about 8 minutes until softened. Add the white wine and leave to simmer for 3 minutes.

Add the beans, gnocchi, cabbage, red pepper and peas. Add the vegetable stock and allow to simmer for 10 minutes. Season with pepper and serve with parmesan shavings sprinkled on the top.
